Akvavit, Beacon (Kazuki) Gin
The Echoing Green
A refreshing mojito riff with subtle anise and cooling cucumber.

Difficulty: Medium
Ingredients:
- 6 Mint leaves
- ½ oz Simple syrup
- ½ oz Lime juice
- ½ oz Akvavit
- 1½ oz Beacon (Kazuki) Gin
- 1½ oz Soda Water
Method:
Clap 6 mint leaves in your hand, and throw them into a Collins glass, build all remaining ingredients in Collins glass reserving the soda for last. Fill glass with ice, and top with 1½ oz soda down bar spoon into the bottom of the glass. Garnish with a cucumber ribbon down the side of the Collins and a fresh mint sprig.
