Ingredients:

  • 1.5 oz Sheringham Seaside Gin
  • 1.5 oz Pear Purée*
  • .75 oz Rosemary-Clove Simple Syrup**
  • .75 oz Lemon Juice
  • Dry Sparkling Wine or Soda Water to top
  • Sprig of Rosemary to Garnish

Method:

In a cocktail shaker filled with ice, blend the purée, syrup, lemon juice, and gin together. Shake vigorously until thoroughly chilled. Pour the mixture into a rocks glass and finish with a slight drizzle of sparkling wine or soda water. To complete, garnish with a sprig of rosemary.

*Pear Purée ingredients:

  • 2 Pears, peeled and pitted (Bosch or Bartlett pears)
  • 1.5 oz Lemon Juice
  • 1.5 Tsp of Fresh Rosemary

Pear Purée Method:

Cut the pears into slices, then mix them in a blender with lemon juice and rosemary. Blend until you achieve a smooth consistency, then delicately strain the mixture through a fine-mesh sieve, discarding any solids. This will yield approximately 1 cup of purée. If you don’t plan to use it immediately, you can freeze the purée in an ice cube tray and store the cubes in an airtight container in the freezer for future use in cocktails.

**Rosemary Simple Syrup Ingredients:

  • .5 Cup Sugar
  • .5 Cup Water
  • 1 oz Whole Cloves
  • 3 Sprigs Rosemary

Rosemary Simple Syrup Method:

Mix sugar, water, cloves, and rosemary in a saucepan over low heat. Once it comes to a boil, take it off the heat and allow it to steep for 30 minutes. Then, strain the mixture into a jar and keep it in the refrigerator until you’re ready to use it.
