Ingredients:

  • 2 oz Sheringham Seaside Gin
  • 1/2 oz Creme de Cacao Liqueur
  • 1/2 oz Simple Syrup*
  • 1 tbsp Raspberry Jam
  • 1 oz Fresh Lemon Juice
  • 1 Egg White

Method:

To a shaker tin, add all ingredients. Shake with 1 ice cube until it melts. Then, fill with ice and shake until tins are cold. Double strain into a Coupe.

For Garnish: Using a Y-peeler or vegetable peeler, zest a large swath of lemon.
Using a cookie cutter or a pairing knife, create a heart-shaped lemon peel.
Express the oils from the lemon peel over the glass and along the stem. Float the heart on top of the foam of the cocktail (peel side up, pith side down).

*simple syrup:

To a small pot on the stove, add 250ml white sugar and 250ml water. Turn on medium heat and stir frequently.
At the first sight of boiling/bubbling, remove from heat and pour into a sealable, heat-safe bottle.
Store in the fridge for up to 1 week.
