Flavour Profile: Fruity, Sour, Sweet

Ingredients:

  • 1 3/4 oz Sheringham Seaside Gin
  • 3/4 oz Melon Liqueur
  • 1/2 oz Fresh Lemon Juice
  • 1/2 oz Mint Simple Syrup*
  • 1 oz Whipping Cream
  • 1 Egg White
  • 5 oz Soda, Chilled

Method:

To a shaker tin, add all ingredients, excluding soda. Shake with 2 medium-sized ice cubes, until they are silent in your shaker tin (45-60 seconds).
Break the seal, add 1oz soda, and 2 more ice cubes. Shake until silent again.
Break the seal, fill with ice, and shake for 45-60 seconds.
Single strain through a Hawthorne strainer into a frozen Collins glass. Place cocktail in the freezer for 5 minutes.
Remove from the freezer, and place a bar spoon into the glass, spoon side up. Pour approx 4oz soda down spoon, allowing cocktail to rise.

For Garnish: Place a paper straw into the hole in foam made by the spoon. Garnish with a spritz of lemon oils (only aromatic, discard after oils are expressed), a mint sprig, and a sprig of lavender.

To a blender, add 50g mint, 500g white sugar, and 250ml water. Blend until smooth. Fine strain through a coffee filter or cheesecloth. Bottle, seal, store in the fridge for up to 2 weeks.
